Our Chianti Classico DOCG Cennino wine is obtained from an assembly of Sangiovese and Cabernet Sauvignon grapes, harvested exclusively by hand and vinified separately. Fermentation takes place in steel tanks at a controlled temperature of around 28-32 ° C with manual pumping over and a stay on the skins that varies from 20 to 25 days depending on the grape variety. After racking, the wine is assembled and placed in barriques where both malolactic fermentation and refinement will take place for a minimum duration of 12 months.
