The Tuscan rosé of Cennino is produced with the bleeding technique, taking the must from the best Sangiovese (over 80%) and Merlot tanks, all done about 12 hours after receiving the grapes in the cellar. After this practice it is vinified in white with a fermentation at a controlled temperature around 16-18 ° C, until all the reducing sugars are exhausted.
